This was my original Meals4sharing blog post.
It’s interesting to go back and read old blog post. This one was written practically a lifetime ago. It tells the story of how I started the meals for sharing section of Eat2gather.
Today I’m going to share with you two things. 1. The recipe for No Peek Beef Tips which is crazy easy! 2. The reason I started Meals4sharing.
Several months ago, Julie from Another Chance Ranch, a blog I was diagnosed with breast cancer. (Julies blog appears to no longer be live.) I have never met Julie, but feel as though I know her from reading her blog, Twitter, and we have emailed a few times. Julies blog is full of interesting stories, great tips and ideas, fun travels, with a few book reviews sprinkled in here and there! She’s just a sweet, sweet Gal! Go say Hi to her and check out her Money Saving tips for making your own detergents. Julie’s cancer hit me hard. I wanted so badly to whip up a batch of something yummy and run it on over to her, but well she’s in Oklahoma, and well I’m in Meechigan. After a taking a while to figure out how I could do something I decided to simply do a weekly link up, that would hopefully inspire others to love on people in their communities, through the gift of food. I pray comfort, peace, and most of all healing for Julie, and I pray that someday I can really deliver a hot meal to her doorstep!
Today in honor of Julie, I will be taking No Peek Beef Tips to two separate amazing Gals in my community. One who, like Julie, is battling cancer, and the other a young mom is living, courageously, with MS.
Shockingly as I am rewriting this post, I have just had a conversation with a dear friend of mine who has been diagnosed with breast cancer. You see the world is in need of much caring. Taking the time to bring someone a hot meal means more than you know!
Gather these ingredients
How to make No Peek Beef Tips
Preheat oven to 350 degrees F

Place 2 lbs beef stew meat in a baking dish. You can use any baking dish or larger oven-safe pan you have as long as it has a lid.

Next pour 2 cups of ginger ale over the meat. (Use brand you like, however if you are from Michigan it best be Vernors!) Wipe the the sweat from your brow because that was definitely the most difficult part of this recipe.

Spread the one can of cream of mushroom soup over the stew meat.
Sprinkle 1 packet onion soup mix over top of the cream of mushroom soup layer.

Cover tightly with aluminum foil, place lid on top of foil. The reason for the double coverage is that you want an airtight seal to keep in all the flavors and juices. Now pop this easy beef tips recipe in the preheated 325 degree oven. And DO NOT PEEK for 3 hours! Go do what ever you need to do. Have fun!
How To Serve No Peek Beef Tips
I love to serve no peek beef over wide egg noodles, or mashed potatoes with a vegetable like roasted broccoli or green beans, and a fresh salad on the side. When sharing this meal I usually bring it ready to put in their oven so they can bake it and get all the smells. Then I give them a bag of wide eggs noodles, and I add a salad. Sometimes I will add side vegetable already cooked in a container so all that needs to be done is a quick re-heat in the microwave.
Tips & FAQ’s
- Substitutions: Any cream of mushroom soup can be used as well as cream of celery. If you cannot find beefy onion soup mix, onion soup mix works as well. You can substitute beef broth for the ginger ale (I wouldn’t, but you can). Something about the ginger ale gives this recipe extra flavor and the combo of ingredients makes the best gravy.
- Beef: I usually buy stew meat by the pound from my local butcher if you cannot find stew meat already to go, cut up two pounds of round steak or chuck roast into one inch cubes.
- Make ahead: No Peek Beef Tips can be made ahead of time and popped in the oven three hours before you are ready to eat. This works well if you are bringing this to someone else for their dinner.
- Storage: store any leftovers in an airtight container and place in refrigerator for up to 3 days. The leftovers are even better the next day!

Just made this recipe and it is as good as it looks in the photos! Came together super quick and it was super tender and full of flavor. Great over garlic mashed potatoes! My 11 year old notoriously slow semi picky eater took 1 bite and said “YUM!” And finished the plate. A must try for the wintry nights!
Erica, You are a darlin for taking the time to rate this recipe and comment. So glad your family loved it as much as ours does! xo Sheila
My sweet sister-in-law was just diagnosed with breast cancer, the news hit us all hard. They live in Minnesota and my family’s first reaction was: how can we help? Not being close by we have decided to send them meals via Schwann’s, Omaha Steaks, Honey Baked Ham, etc. We came up with a schedule so each week they will receive a few meals. A small effort on our part, huge help for them. It’s the least we can do to bring some comfort and they are so grateful to have something all prepared and ready to serve.
This dish looks delicious, I’ve printed it up to bring to Florida next week, when we are there to welcome our new baby granddaughter. I love this post, Sheila. Touches the heart of all us.
Debbie,
Oh my I am so sorry to hear of your sister-n-law. What an amazing idea! I love that even though you are far away you have found a way to love on your family from afar. I may have to use you as an example one day soon in a blog post ; ). So excited for you…the arrival of a new grandchild!!! Makes my chest feel like bursting for you! xoxox Have a great trip, thanks for stopping by and leaving this comment. Much Love, Sheila

Beth, I’m glad it was a hit with your family! I actually need to bring this one back into my meal rotation again, it’s been awhile! Thanks for stopping by! Sheila
I made these this past weekend in my crock pot. I doubled the recipe and made sure there was enough liquid to cover the meat. I think maybe an extra 1/2 cup. I sealed the crock pot with foil and then the lid. I cooked them on low for about 10 hours and they were divine! I recycled the leftovers into a yummy beef stew too! Thanks for the recipe!
OOOh Amy thanks for letting me know how that worked for you. Arent they super yummy?!
I love LOVE beef tips over rice cooked in the oven this way- so tender and the house smells so good, but the recipe I use is a lot longer and more complex than this. I am so looking forward to trying this one! It sounds easy and looks great.
Awe! You just made my day! Now, if I could just gobble that up! It looks delish! I am going to make that soon for our next church potluck!
You and Tickled Red are just too kind! I love you guys!! We really do need to meet IRL!
Awww…you are just the sweetest!! I love your idea and that it’s all about giving to one another. Simply beautiful both your big heart and the lady that you inspired you. Julie is simply sunshine personified 😀 xoxo
Hi Sheila,
Wow ! You weren’t kidding – that is easy. 🙂
Your post about preparing a meal for someone who is dealing with illness is perfect for me to read today. My girlfriend’s husband had a throat operation on Wednesday. He is fine and recovering at home now but can’t eat much. So…I thought I would bring over some nourishing homemade chicken broth. Not only perfect for his throat but perfect for the cold day we are having here in central Texas.
Have a great weekend.
Love,
Mary
