Apple Crisp

One cannot deny the pure perfection of the classic fruit crisp. Simple ingredients. Familiar comforting flavors, this dessert is one of my mainstays. I have never had anyone turned down Apple Crisp.

Recently, someone told me that I should not take for granted that everyone makes the recipes that I find common. I did not have a written recipe for apple crisp.  I’ve been making it since I was a kid. When this friend told me that I shouldn’t assume everyone throws together apple crisp in their sleep, I thought sheesh I should probably take note of what goes into making fruit crisp. So after making crisp several times and writing down how I do it this is the written word of how my family makes crisp. A crisp is a fruit dessert with a topping that crisps up when baked and the fruit layer softens and becomes somewhat jammy underneath. Because I almost always have apples or some sort of frozen fruit like blueberries in my freezer this makes it super easy to throw this dessert together at a moment’s notice if friends stop over. Or if we have a hankering for something sweet. Without further ado I would like to share with you my apple crisp recipe.

Peeling apples is therapy for me, I just get into my little peeling world, and before I know it 5 pounds of apples have been peeled, cored and sliced. I bought one of those apple peeler slicer corer doo-hickys once, I hated it. I gave it to a friend. I actually timed myself to see which was faster me or the doo-hicky. The good old fashioned knife won! With way less mess. But if you have this doo-hicky and love it kudos to youdos!

Add flour, brown sugar, and spices into your food processor, give it a few pulses. If you do not have a food processor no fear I made the crumble for this crisp with a fork for years.
A pastry cutter works well too. Add the cold, cubed butter, pulse until a nice even consistency. After flour butter mixer is a good consistency add the oatmeal and given a few more pulses.
 
Pour the crumble over the apples. Pat down and give dish a bit of a shake, you want the crumble to fall down between the apples a little bit.

Place in oven for 45 minutes. Take out and let cool slightly before serving.

This is my comfort food. I love to eat the leftovers for breakfast with plain greek yogurt on top instead of ice cream. My sweet Seestor ran herself crazy in her first half marathon yesterday, so I made her dinner with apple crisp for dessert. Yes, she is a runner. If it weren’t for her love of apple crisp I would question that she is really even of my gene pool. I cannot run. I hate to run. If I had to run to save my own life, I would die. Maybe if you held apple crisp out in front of my I’d run faster.

Equipment

  • 1 9×13 inch baking pan

Ingredients
  

  • 10 cups sliced apples
  • 1 cup flour
  • 1 cup brown sugar
  • 1 cup oatmeal
  • 1/2 tsp ground nutmeg
  • 1 1/2 tsp ground cinnamon
  • 1 cup butter cold and cut into small cubes

Instructions
 

Preheat oven to 350°. No need to grease pan.

  • Peel, core, and slice apples. Place them in an even layer directly into 9×13 inch baking pan.
  • Add flour, sugar, cinnamon, nutmeg to the bowl of food processor. Add cubed butter pulse until you have a fine crumble. Add oatmeal and pulse a few more times to incorporate oatmeal into crisp topping with out breaking down the oats too much.
  • Pour crisp topping over apples. Spread out in an even layer. Place in preheated oven and bake for 45 minutes.
  • Remove and serve immediately with a scoop of vanilla ice cream.

Notes

This recipe can be easily cut in half and made in a 9″ pie plate or an 8×8 baking pan.  
Feel free to add more or less apples if you like.  This recipe is very flexible and extremely hard to ruin.  
Fruit: You can make this same recipe with blueberries, peaches, pears, mixed berries.  
Frozen Fruit: If using frozen fruit you will need to bake an hour possibly longer.

  1. Mmmm … what could be better than apple crisp! I'll have to try it with the maple cream sauce next time. Other than that, I make it pretty much exactly how you do, except I add one "secret ingredient"… ground ginger.

  2. Macintosh apples… YUM! They are hard to find down here for some reason. Love them. Love your Apple Crisp recipe. Need to try that Maple Cream sauce. Thanks for sharing!
