Homemade Freezer Waffles
Ok Kraut this one is for you!!!
If you have been around here very much you know that I have family on the other side of the pond. The Big Pond. If you have no idea what I’m talking about here’s the story, in a nutshell:
{In 1986 our family hosted an exchange student from Germany, Andrea…a.k.a. Kraut. We had a great year, a unbelievable experience, Andrea became our new sister, friend, daughter. The following year after I graduated from high school Andrea’s family invited me to come and experience life, and school in Flensburg, Germany, with their family. A true exchange of life experiences! 26 years later we are still a huge part of each others lives. Very thankful for God placing this lady (and her family and friends) in my life!}
Last April Kraut, left her husband Tim behind, and ventured over the pond from her home in Valence, France, with her two cutie patooties Emil and Lily. Several months after they returned home I recieved an email wondering if I had a recipe for waffles that could be frozen, because she has searched high and low for the freezer waffles that my kiddos eat daily, but was unable to find anything like what we have in the good ol’ US of A! I told her I would work on it…..good thing she is patient, because I think that was like 6 months ago.
So now thanks to you Kraut, my kids want me to make them homemade freezer waffles instead of buying them! That’s ok, it’s really not that hard, and it’s SO much cheaper!
This recipe can be used on any type of waffle iron, I just happened to have a belgium waffle iron. Preheat waffle iron. Set out a cooling rack, and and place a baking sheet in the freezer for flash freezing.
Now you are ready to mix up your batter. 1. Combine 2 cups of Flour, 1 tablespoon + 1 teaspoon of Baking Powder, 1/2 teaspoon Baking Soda, 1/2 teaspoon Salt in a bowl set aside. 2. In a large measuring cup measure out 2 cups of Milk, add 3 eggs, 3/4 cup vegetable oil, and 1 teaspoon Vanilla whisk until combined well. 3. Add wet ingredients to dry whisk together until all lumps of flour are out. 4. Ladle batter into waffle iron.
5. Bake until done, remove to cooling wrack. When completely cool place on cold baking sheet in freezer. When waffle is frozen, store in Zip-loc freezer bags until ready to eat.
Note: The cooling step, I found out, is very important, because if you just whip the hot waffle in the cold freezer, condensation will form and make your waffles weird and soggy. You do not want weird soggy freezer waffles. So don’t try to speed through this step.
When ready to eat, pop your homemade freezer waffle in your toaster on the medium to low setting. How do you like my sticky, crumby toaster? This toaster is the most used applicance in my house!

Homemade Freezer Waffles
yields 6-8 waffles depending onsize of your iron
2 cups Flour
1 tablespoon + 1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
2 cups Milk
3 Eggs
3/4 cup Vegetable Oil
1 teaspoon Vanilla Extract
Whisk together flour, baking powder, baking soda, and salt in mixing bowl. In large measuring cup or bowl add milk, eggs, oil, and vanilla whisk until smooth. Add wet ingredients to dry, whisk until batter is smooth, making sure there are no flour lumps. Ladle batter into preheated waffle iron, bake until done, remove to cooling rack, when completely cooled, place on a baking sheet in freezer until frozen solid, then store in Zip-loc freezer bags.

Top with your favorite toppings. Ours happens to be Nutella! Maple syrup works too! This is actually a frozen and toasted waffle, see how well it holds up! So delicious!

I made this for dinner tonight, it came together so quick and everyone loved it! Including Mr. Picky 4 year old that won’t eat anything besides hash browns and chicken nuggets. Thanks for a great recipe!!

So important about the cooling step, have learned that. I’ve made waffles from a box and freeze them, need to try from scratch! My sons favorite topping is nutella! I am known to make him waffle sandwiches with nutella and banana 🙂 yum!

Thanks so much for working this out for me. So I know just what I will do this weekend. Prepare waffels for the hungry crowd we expect for our little holiday next week. We have 2 days off over ascension thursday and friday. And we expect 5 german couples with kids . They want to take in some of our southern sun here and try the pool. Why have I never thought to do this? I love waffles but don’t make them often enough. These sound so good!
I know I’m not really a huge fan of making waffles either, not sure why…guess I don’t like getting out the iron and having to clean it up afterward, but this way I make at double or triple batch of batter and get it all done in one fell swoop!
I think it is so cool that Andrea is living in France now and wants freezer waffles! Sheila, you Rock!
On a side note, I thought you had stopped blogging and it made me very unhappy. When you switched from Strawberry Cake I input the new address wrong and have missed MONTHS of posts. So glad I figured it out and can enjoy your blog again 🙂

We always freeze any leftover waffles when we are lucky enough for my husband to make them. Easy peasy breakfast for sure!!
