How to make Easy Mini Wedge Salad Skewers

Mini Wedge Salad Skewers are a fun spin on the traditional wedge salad. A smaller version of that mountain of cool, crisp, goodness, topped off with skewer of fun toppings. Read on for a variety of combinations to meet every taste!

I love a wedge salad but often at a restaurant it’s too much salad! I either eat it all and then am overly full when my meal comes, or I end up leaving half a salad on my plate! I wanted to do a wedge salad for a dinner party, however my dilemma was 1.) I didn’t want it to be too much salad for everyone, and 2.) I didn’t have enough plates or room on my counter to plate up each salad individually. I had a great idea! The perfect way to serve one of my favorite salads.

  1. Remove outer lettuce leaves from the outside of the head of lettuce. Rinse head of lettuce and pat dry with paper towel.

2. Cut the bottom off the head of lettuce.

3. Sit head of lettuce on the flat side that you just cut off, and cut the head of lettuce right down the middle.

4. Lay lettuce on the largest side with the bottom facing away from you, cut into 3 wedges. (If your head of lettuce is large you can also cut in half again and then cut each of those halves down the middle making 4 wedges.)

You will get 6 perfect size wedges from a small to average head of iceberg lettuce, 8 from a large head of lettuce. Now its time to assemble the wedge salad skewers!

5. Place lettuce wedges on a serving platter.

6. Assemble your skewers. You can do this in any order you prefer, and will a variety of toppings. (see tips & variations below)

7. Secure each skewer into the small wedges of lettuce. If you secure skewers properly into lettuce wedge people should be able to pick them up individual salads with there fingers and transfer to their plate! How fun is this finger food!?

  • Make Ahead: This is a great salad to prepare in advance. Cut lettuce into wedges and place dampened paper towel over lettuce making sure to cover them completely then cover with plastic wrap. Skewers can be made ahead as well and stored in an airtight container. Just before serving skewer each wedge and serve with your favorite choice of salad dressing.
  • Side Dish: If you are asked to bring a side dish these mini wedge salads make a great choice for the salad course or even as an appetizer.
  • Easiest way to serve this salad is on a large wood cutting board or a serving platter that has room for a small dishes of salad dressing.
  • Greek Salad Skewer: skewer cucumber slice, cherry tomato, slice of red onion, a kalamata olive and if possible a cube of feta cheese. Sprinkle platter with chopped parsley and oregano. You can also serve crumbles of feta cheese on the side and serve with a Greek or Italian dressing
  • Anti Pasto Skewers: skewer pepperoni, olives, cherry tomato, marinated mozzarella balls, and pepperoncini peppers and secure into the wedge of lettuce. Sprinkle with parsley and fresh ground black pepper, serve with a side of Italian dressing.
  • American Salad: Skewer cucumber slice, grape tomato, a long shaving of carrot, and a chunk of cheddar cheese. Secure into wedge of iceberg lettuce and sprinkle with fresh dill and parsley and serve with ranch dressing on the side.

Equipment

  • 6 6″ wooden skewers

Ingredients
  

  • 1 head of iceberg lettuce
  • 1 quart of cherry tomatoes
  • 3 pieces of bacon cut into 2 or 3 pieces each
  • Mozzarella balls
  • 6 basil leaves
  • Ranch Salad Dressing
  • Blue Cheese Salad Dressing

Instructions
 

  • Clean lettuce and tomatoes, pat dry with paper towel.
  • Trim up the head of iceberg lettuce. Removing the outer leaves, and cutting off the bottom stem.
  • Cut head of lettuce in half. Lay flat half down and cut into three pie shape pieces. (as seen in post) Flip them over so they look like little lettuce pyramids.
  • Skewer 2 tomatoes, a basil leaf, a ball of mozzarella, a piece of bacon and then stick each skewer into the top of the lettuce wedge. arrange on a platter surrounded by toppings and dressings.

Notes

This salad was easy to make ahead, cover with dampened paper towels to keep the lettuce fresh and crisp and store in refrigerator. Add skewers just before serving.
