Hearty Steak Soup

Vegetable beef soup, is full of tender strips of round steak, and lots of vegetables in a flavorful tomato soup. This recipe is so easy. It’s the perfect soup for a busy winter night.

I’m going to make this short and sweet today, because that’s what this soup is, simple and delicious.   So simple in fact that you can throw it together in fifteen minutes or less if you’re a fast chopper.  The cook time is a bit longer, 1 1/2 hours, so it’s not a last minute meal, but if you plan ahead a bit, you can get it ready throw it in your crockpot, or in your oven, and forget about it until dinner time.

It’s been raining cats and dogs here the last couple day,  nothing warms you on a cold, wet, November day like a bowl of Steak Soup.  So lets get cookin!

  • round steak
  • Lawrys season salt
  • butter
  • onion
  • celery
  • red wine
  • chili powder
  • smoked paprika
  • black pepper
  • tomato sauce
  • sugar
  • water
  • frozen mixed vegetables

Preheat oven to 300 degrees.

Slice round steak into thin slices against the grain and sprinkle with lawrys salt, set aside.

Melt butter in 6 quart pot or dutch oven, when melted and starting to sizzle add chopped onion and celery. Saute’ until vegetables are soft.

Toss the seasoned steak in the pot. Cook on medium high heat until all the meat has been browned, and there isn’t any pink left.  If you have red wine on hand this is the point you want to give a splash of red wine in the pan to deglaze the pan. If you don’t have red wine on hand you can skip this step.

It’s hard to get an appetizing photo of meat! Look away!! After all the steak is no longer pink add smoked paprika, chili powder, black pepper. Stir to combine.

Add tomato sauce, sugar, bag of frozen mixed vegetables and 1 1/2 cups of water.

Cover pot with aluminum foil, place lid over foil, (this helps seal in all the moisture and flavors) put soup pot in preheated oven for 2 hours, 325 for 1 1/2 hours.  When you remove soup from the oven wear an oven mitt, because when removing foil, steam can release and burn your hand.

This hearty steak soup recipe is one of the many dinners that was in my moms regular meal rotation when I was growing up.   It comes together so quickly, pop it in the oven and when everyone is home and ready to eat, serve it up with some bread or crackers and you’ve got a meal!

Ingredients
  

  • 2 pounds round steak cut in thin strips
  • 2 teaspoon Lawrys's seasoning salt
  • 1 tablespoon butter
  • 1 1/2 cups onion chopped
  • 1 cup celery chopped , approximately 3 stalks
  • 1/4 cup red wine optional
  • 1-3 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 56 ounces tomato sauce 2-28 ounce cans
  • 1 1/2 cups water
  • 16 ounce bag of frozen mixed vegetables (carrots, peas, corn, green beans)
  • 1 tbsp sugar

Instructions
 

  • Slice round steak across the grain into long thin strips sprinkle with Lawry's season salt and set aside.
  • In a 6qt pot or dutch oven sauté onions and celery in tablespoon of butter, until tender, and all extra liquid is evaporated away.
  • Add seasoned meat to onions and celery, brown meat in pan with celery and onions on medium-high heat. If you have red wine, give a splash or two at this point no more than 1/4, helps deglaze the pan, but it is not necessary.
  • When meat is no longer pink add smoked paprika, chili powder, and pepper. Mix to combine spice all over the steak. (Depending on the amount of heat you like add 3 teaspoons for spicy, 1 just a hint of spice of chili powder. Continue to cook meat with spices for another 2 minutes.)
  • Add both cans tomato sauce, 1 1/2 cups water, and 1 tbsp sugar. If you have it beef broth is nice too.   Add in bag of veggies.  Stir to combine. Bring to a low boil.
  • Cover pot with foil, place cover on top to create a airtight seal.  Cook 1 1/2 hours at 325 degree in oven, or 2 1/2 hours at 300 degree in oven.  

Notes

This soup also works well in a crockpot. After assembling on the stop put in a 6-8 quart crock pot and cook on low for 4 hours, on high for 2 hours.
