Chicken Curry Salad

This beautiful chicken salad is full of flavor and all sorts of delicious ingredients. Grapes, apples, cashews to name a few. It's perfect on a croissant, or on top of a green salad. You can also add pasta to make it into the perfect past salad.

Ingredients
  

  • 4 whole chicken breasts
  • 3/4 cup chopped apple
  • 3/4 cup halved grapes
  • 1/2 cup chopped celery
  • 1/4 cup finely chopped green onion
  • 3/4 cup mayonnaise
  • 3/4 cup Greek yogurt
  • 2 tbsp lemon juiced
  • 1 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cashews chopped

Instructions
 

  • Cook chicken breasts. You can bake them or poach them. Once cooked allow chicken to cool and then cut into small chunks or shred depending on your preference.
  • Clean and chop fruit and vegetables while chicken is cooling.
  • Add cooled chicken pieces, apples, grapes, celery, and green onion to a mixing bowl

  • In a small bowl combine mayonnaise, yogurt, lemon juice and zest, curry powder, salt, and pepper. Whisk until combined.
  • Pour salad dressing over chicken salad ingredients and fold to combine. Serve immediately or store in refrigerator until ready to serve. Before serving top with chopped cashews.

Notes

Chicken Curry Pasta Salad:  Cook 1 pound of pasta, any shape you like, I prefer cavatappi for pasta salad.  Add cooked, rinsed and cooled pasta to chicken salad.  Adjust dressing add additional 1/4 cup of mayonnaise and yogurt and adjust seasonings to your taste.
