Cobb Guacamole

Ingredients
  

  • 3 avocados
  • 3/4 cup sweet onion diced medium
  • 1 roma tomato diced
  • 1 cup canned corn sweet no salt added, drained

Dressing

  • 1 clove garlic minced
  • 6 leaves fresh basil finely chopped
  • 1/2 tsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1/2 tsp fresh ground pepper as much as you like
  • a dash of Worcestershire sauce
  • 2 tbsp olive oil
  • 1 tsp sugar

Garnishes

  • 1/2 cup crumbled blue cheese
  • 4 slices thick cut bacon fried up crispy chopped or crumbled

Instructions
 

  • Smash the avocado in medium sized bowl, add onion, corn and tomato mix together.
  • Whisk the dressing ingredients together. Pour over the avocados mixture and combine.
  • Just before serving sprinkle blue cheese and crumbled bacon on top.
