Cobb Guacamole

- 3 avocados
- 3/4 cup sweet onion diced medium
- 1 roma tomato diced
- 1 cup canned corn sweet no salt added, drained
Dressing
- 1 clove garlic minced
- 6 leaves fresh basil finely chopped
- 1/2 tsp Dijon mustard
- 1/2 tsp kosher salt
- 1/2 tsp fresh ground pepper as much as you like
- a dash of Worcestershire sauce
- 2 tbsp olive oil
- 1 tsp sugar
Garnishes
- 1/2 cup crumbled blue cheese
- 4 slices thick cut bacon fried up crispy chopped or crumbled
Smash the avocado in medium sized bowl, add onion, corn and tomato mix together.
Whisk the dressing ingredients together. Pour over the avocados mixture and combine.
Just before serving sprinkle blue cheese and crumbled bacon on top.
