1 1/2cupsspanish onionpeeled and diced (aprox 1 onion)
3stalks celerydiced (It's Ok to chop up some of the leaves, they add flavor!)
3wholecarrotsdiced into small cubes (approximately 1 1/2 cups)
1tbspItalian seasoning blend
2tspchili powder
1tspcumin
1tspsmoked paprika
1/2tspred pepper flakes
28ouncecan crushed tomatoes
15ouncecan tomato sauce + 1 can of water
15ouncecans black beans
15ouncecan cannellini beans
15ounce can kidney beans
32ouncesvegetable or chicken stock
1tbspsugar
1tspsalt
Instructions
Add olive oil to a large stock pot, mine is 10 quart, turn heat on medium high add ground turkey and cook until brown breaking it up with a meat chopper or a wooden spoon.
While meat is browning chop vegetables. Add diced onion, celery, and carrots to pot with meat. Mix together and allow to cook for about 10 minutes or until vegetables are tender.
Drain and rinse the beans. Set aside.
Go back to the browning meat and vegetables add spices at this time. Allow to simmer for a minute longer. Add tomato sauce (+1 can of water) and crushed tomatoes followed by beans, stock, sugar, salt, and pepper to taste.
Turn heat down to low and allow to simmer for 30 minutes.
Notes
Serve with bread, oyster crackers, or tortilla chips.Slow Cooker: I made this the day before, poured it in my crock pot dish, refrigerated it, the next day I turned my crock pot on low; and let it cook for 4 hours before serving.
