Greek Guacamole

Greek Guacamole is the perfect flavor combination of Greek cuisine wrapped into a beautiful chunky guacamole topped with a layer of crumbled feta cheese. Eat it as a dip, as a salad, wrap it up with grilled chicken in a wrap, top your burger with it. The possibilities are endless!

Ingredients
  

  • 3 medium avocados cut into large chunks
  • 1 whole lemon juiced
  • 3-4 roma tomatoes diced
  • 1/2 red onion chopped into medium sized dice

greek dressing

  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 whole lime juiced
  • 1 tsp honey
  • 1 clove garlic minced fine
  • 1/4 cup chopped cilantro
  • 1/2 tsp Italian seasoning blend
  • 1/2 tsp Cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper

toppings

  • 1 cup chopped black olives optional
  • 3/4 cup crumbled feta cheese

Instructions
 

  • Combine dressing ingredients in bowl, whisk well and set aside.
  • Dice avocado and squeeze one whole lemon over avocados and toss.
  • Add diced tomatoes, diced onion, and chopped cilantro. Pour dressing over and combine all the ingredients.
  • Put in serving dish and top with crumbled feta cheese and sliced olives.

Notes

Dressing shortcut:  Use 1/2 cup Wishbone Italian dressing, 2 tablespoons lime juice, 1/2 teaspoon cumin, and 1/4 cup chopped cilantro 
Serve with tortilla chips, or pita chips.  This is also amazing piled on top of grilled chicken, or on top of a burger.  I have made gyros and put this in side with the meat and lettuce,  wrapped them up for the perfect light dinner or lunch!
