This meal is full of flavor and comes together in under 20 minutes. Stir fried vegetables, tasty chicken sausage, and cheesy tortellini make a dinner everyone will love and the leftovers are even better the next day!
1poundprecooked chicken sausageprecooked any flavor (I used andouille.)
9ouncepackage frozen cheese tortelliniany type of tortellini works
1wholered bell pepperdeseeded and sliced into think strips
1cupsweet onionsliced thin
15ouncecan cannellini beansdrained and rinsed
2cupsfresh spinach
1cupchicken broth
Pepper to taste
Instructions
Cook tortellini according to package directions, drain off water and set aside.
Cut red pepper and onions in thin slices, slice chicken sausage into 1/2 slices. Heat frying pan over medium high heat add in sausage and cook until starting to brown, add in peppers and onion cook until soft.
Add cooked tortellini to your frying pan, cook until tortellini starts to brown. Keep ingredients moving in pan so they don't burn.
Lastly add spinach, beans and chicken broth give it all a good stir, cover and let cook on medium for 3 minutes.
Notes
Optional 1: At the end add in 4 ounces of cream cheese and 1 cup of Monterey Jack cheese, add 1 more cup of chicken broth to make a creamy cheese sauce!Option 2: Leave tortellini out and serve over brown rice.
