Light and flavorful this coleslaw has a kick of flavor that pairs well with any grill meat or fish. It's perfect for tacos, or to mound on top of pulled pork bbq.
1Granny Smith Apple shreddedor any other tart variety
2tablespoonfresh Ginger grated
1cupMayonnaise
1tablespoonApple Cider Vinegar
1tablespoonhoneyor granulated sugar
1/8-1/4teaspoonCayenne Pepper
1/2teaspoonColeman's Mustard Powder
salt and pepper to taste
Paprika for garnish
Instructions
In a large mixing bowl combine bag of coleslaw, matchstick carrots, shredded apple, and Red Bell Pepper cut into thin strips. Toss to combine.
In a smaller bowl whisk together mayonnaise, grated ginger, apple cider vinegar, honey and seasonings. If you like spicy don't be afraid to add more cayenne, or more sweetener if you prefer a sweeter slaw.
Pour dressing over slaw mixture, fold until combined. Give it a taste, add salt and pepper if you feel the need. Transfer to a smaller bowl and sprinkle with paprika for garnish. Store in an airtight container in the refrigerator. Allow 15 minutes - 1 hour for flavors to meld together.
