Sugar Cookies

If you like Lofthouse cookies, you will love these sugar cookies. They are tender and have a melt-in-your-mouth texture. They are full of vanilla and have a hint of lemon flavor that balances the sweetness.

Equipment

Ingredients
  

  • 1 cup softened butter 2 sticks
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 cup vegetable oil
  • 2 whole eggs
  • 1 tsp vanilla
  • 4 1/2 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp cream of tartar

Icing

  • 1 cup powdered sugar
  • 1 tbsp milk
  • 1-2 drop lemon juice
  • 1 tbsp corn syrup

Instructions
 

When ready to bake preheat oven to 375°, line baking sheets with parchment paper.

  • Measure flour, baking powder, salt, and cream of tarter into a small bowl, set aside.
  • Add softened butter and sugars to mixing bowl, cream together using paddle attachment (if using a stand mixer).
  • Gradually add in vegetable oil and vanilla extract.
  • Add eggs one at a time. Beat until smooth and creamy, about 3 minutes.
  • Gradually add the dry ingredients. When the dough is completely incorporated, dump it out onto a floured countertop and divide it into 4 balls. Wrap each ball of cookie dough in plastic wrap and refrigerate for 2-24 hours. The dough is more manageable when it's cold.
  • Remove cookie dough from refrigerator one ball at a time. Lightly dust counter top with flour and roll dough out to a little less than 1/2 inch thickness. Cut out cookie shapes. Using a spatula pick up cut out dough and transfer it to prepared cookie sheet.
  • Bake in a preheated oven for 8-10 minutes, when cookies start to brown around the edges take them out and transfer to cooling rack.

Icing

  • Combine icing ingredients in a small bowl. When cookies are cooled, ice them with icing using a spatula or dipping the cookie face down in the bowl of icing. You can also use a piping bag if you want to get fancy.

Notes

This dough can get sticky as it warms up.  It's ok to sprinkle more flour on the dough or under the dough if you need to or to put the dough back in the refrigerator for a little while.
