Ingredients
  

  • 1 cup buttermilk
  • 1 1/2 cups oatmeal
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 whole eggs
  • 1 1/2 cups whole wheat flour all purpose flour can be used
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground clove
  • 1/8 tsp ground nutmeg
  • 15 ounce can pumpkin puree

Streusel Topping

  • 1/2 cup butter cold and cut into small pieces
  • 3/4 cup whole wheat flour or all purpose flour
  • 3/4 cup brown sugar
  • 3/4 cup old fashioned oatmeal
  • 1 tsp cinnamon
  • 1/4 tsp salt
